After decanting the must and the consequent tapping, 50% of the mass ferments in steel, while the remaining 50% in French oak tonneaux at a constant temperature of 18 ° C.
50% of the wine is aged in stainless steel vats while the other 50% in French oak tonneaux. After about six months, the two masses are blended, a short passage in stainless steel vats for another two months completes the aging period in the cellar.
